The Trentino recipes have ancient origins and are inextricably linked to the rural world of our grandparents and great-grandparents. The kitchen of the past was rich in nutritious foods essential to withstand the heavy pace of work in the fields and forests ... hearty food yes, but prepared with few ingredients combined and seasoned properly by the expert hands of mothers of the family.
From the ingenuity of our ancestors delicious foods were born. Foods at the time had to be preserved throughout the winter: the snow, much more than today, fell tirelessly for months!

 

The recipes of Trentino fish in a distant past, but the tradition is kept alive thanks to the passing on, from grandfather to grandson, of the knowledge related to the most authentic dishes of Trentino Alto Adige.

Let's start with an appetizer with a rich chopping board, where the strong taste of malga cheeses meets the spicy taste of bacon and lard.
Among the most famous traditional dishes of Trentino Alto Adige we couldn't help but put the spotlight on the famous Canederli, “dumplings†of breadcrumbs, eggs and milk, flavoured with herbs, cheeses and speck: a real journey of the senses at every mouthful!
Why not try the Tonco del Pontesel second course, the result of the wise reuse of the "leftovers" of the kitchen? Or a timeless classic like polenta, accompanied by a tasty mix of fragrant mushrooms that grow in the shady forests of Trentino.
Dulcis in fundo, it's worth saying, the Strudel, crowning the recipes of Trentino! Grandma Elsa, matriarch of the Pineta, has left us the perfect recipe to obtain an impeccable Strudel: apples from our Val di Non, sultanas, pine nuts and cinnamon enclosed in a casket of very thin pasta cooked to the right point.
